I made this wonder last night for dinner. Oh boy was it ever good!! I wanted to make it ever since I saw it on The Pioneer Woman Cooks blog, especially since my father in law can't eat corn on the cob. He was ecstatic about it last night! First fresh corn he's had in a long time. :D I think it meant a lot to him. :)

It has been non-stop since I last posted! Picked up Sara at the hotel, hit the grocery store for some goodies for dinner (actually obeyed the list this time!), came home and started cooking!! Here's what I made, courtesy of the Food and Family magazine published by Kraft:
Golden Crusted Pork Chops with Green Beans
Prep: 10 min. Total: 40 min. Serves: 6 (or 3 really hungry people)
1 pkg Stove Top Stuffing Mix for Chicken (I used the Pork one)
3 Tbsp Miracle Whip dressing
3 Tbsp Grey Poupon Dijon Mustard
6 bone-in pork chops (2 1/4 lbs)
3 cups frozen green beans
2 Tbsp Kraft Zesty Italian Dressing
Preheat oven to 425 degrees F. Prepare stuffing as directed on package. Combine Miracle Whip and mustard in small bowl; set aside.
Arrange chops in 13x9-inch baking dish; brush both sides with the mustard mixture. Top chops with stuffing; cover dish with foil. Bake 10 min.
Meanwhile, place beans on large sheet of foil; drizzle with Italian dressing. Fold foil over and seal edges to form packet. Uncover chops; place bean packet in oven. Bake an additional 20 min. or until chops are cooked through. Sprinkle with fresh parsley if desired.
The one thing I would do differently if I make this again would be to put the beans in at the same time as the chops. Mine still came out cold and we had to nuke 'em. But otherwise it was delicious!! I know I promised you a recipe for those pumpkin pancakes, but that's going to have to wait a while.
Btw, Elaine has landed and she is on her way to her hotel in Lynnwood. After that she'll probably come up here. I saved some pork chops for her. I made two batches of the chops and that has fed 5 hungry people plus her when she gets here.
Also, finished designing the programs!! Did a test run on my last piece of paper and it seems to have worked out alright. I'm going to print it out again on the test sheet that came with the blank programs, but there shouldn't be a problem with the margins. Hooray! Another thing to check off my list!
